I should probably start out by saying I don't like donuts. I mean it really doesn't make sense why I don't but that's just the reality. The only acceptable donut eating time in my book is when it's covered in cinnamon sugar and enjoyed with a large glass of cider.  

Baked donuts are a different story because yes they are essentially just cake. 

I love this recipe from How Sweet Eats. The fresh strawberry glaze is just amazing and there are so many options for toppings. They come together in no time and are a real crowd pleaser!

INGREDIENTS

  • 1 cup all-purpose flour
  • 3/4 cup cake flour
  • 1 1/2 teaspoons baking powder
  • 1/8 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3/4 cup buttermilk
  • 1/4 cup confetti sprinkles (optional)

glaze

  • 1 cup sliced strawberries
  • 2 to 3 cups powdered sugar
  • toppings of choice

METHOD

 Preheat the oven to 350 degrees . Spray your donut pan with nonstick spray and set aside.

In a bowl, whisk together the flours, baking powder and salt.

In a mixer whisk together the butter and sugar until combined. Add in the dry ingredients and the eggs, mixing until the batter is just combined. Add in vanilla, then the buttermilk until the batter is smooth. If using add in sprinkles. Use a spoon and add the batter to the donut pan. Clean off the middle circle from batter to get a nice donut hole. Bake for 12-15 minutes, or until a toothpick comes out clean and the tops are slightly golden. Remove and let cool. Once they are cool, dip each donut in the glaze and cover in toppings/sprinkles. Serve up!

to make the glaze:
Add the berries to a food processor and blend until completely pureed. Transfer the strawberry puree to a bowl and whisk in the powdered sugar, 1 cup at a time. Depending on how much water content you strawberries have, the full amount of sugar you need may differ. You want the glaze to be sticky and stay on the top of the donut without being too liquidy. If after 2 cups of sugar it's still too thin, add more sugar 1/2 cup at a time and stir well.
